The name means 'at the end of the world,' and the vineyard sits at higher altitude than most Burgundy whites, giving the wine a cool, nervy character. Colin-Morey applies the same winemaking to this cuvée as to his premier crus: reductive élevage, no bâtonnage. The 2018 shows green apple, lime zest and flinty minerality, with a lean, focused palate. An entry point into PYCM's range, but it outperforms its appellation. Drink now.

About This Producer
Pierre-Yves worked as winemaker at his father Marc Colin's estate from 1994. In 2001 he started a small négociant business on the side, and by 2005 he had left the family domaine to go fully independent. He brought 6 hectares from his family inheritance and additional parcels from his wife Caroline Morey's family. The reductive, tension-driven style he developed (350-litre barrels, no bâtonnage, 18-20 months élevage) quickly gained critical attention. Sons Mathis and Clément now work at the estate.
