Olivier Lamy farms his Saint-Aubin vineyards at densities up to 14,000 vines per hectare, forcing roots deep into marl-limestone. You can taste the result here: the 2016 Châtaigners has a real chalk-and-salt backbone underneath clean pear and citrus fruit. Medium-bodied, textured, with an almond note on the finish. This is Bourgogne-level Burgundy that drinks like a villages wine, and at 8 years old it's exactly where it should be.

About This Producer
The Lamy family has grown vines in Saint-Aubin since 1640, but the modern domaine was founded by Hubert Lamy in 1973 with just 1 hectare. His son Olivier took over in 1995 and introduced high-density planting (up to 14,000 vines per hectare) and organic farming. The estate now covers about 18 hectares across Saint-Aubin, Chassagne-Montrachet and Puligny, producing mineral-rich whites that compete with wines from more famous neighbouring villages.
