Hubert Lamy
About the Estate
Hubert Lamy is one of the domaines that proved Saint-Aubin could produce serious white Burgundy, not just affordable Burgundy. Under Olivier Lamy's leadership, these wines compete directly with their more famous Puligny and Chassagne neighbours. The Lamy family has grown vines in Saint-Aubin since 1640, but the modern domaine was founded by Hubert Lamy in 1973 with just 1 hectare. Through the 1990s Hubert expanded, acquiring prime vineyards in Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet and Santenay. His son Olivier took over in 1995 and introduced radical changes: high-density planting up to 14,000 vines per hectare (forcing roots deep into the limestone) and organic viticulture. The domaine now covers about 18 hectares, 80% Chardonnay and 20% Pinot Noir, and produces razor-sharp, terroir-expressive wines from what were once considered secondary villages.

Terroir
18 hectares across Saint-Aubin, Chassagne-Montrachet, Puligny-Montrachet and Santenay, 80% Chardonnay and 20% Pinot Noir. The hilly terrain (300-400 metres altitude) and marl-limestone soils of Saint-Aubin yield whites with vibrant acidity and flinty minerality. Olivier Lamy's use of high-density planting (up to 14,000 vines per hectare) intensifies root competition, drawing out a strong sense of place in each cuvée.
